A Winter Warmer
Spiced (Cha) Tea
This recipe makes 4 cups.
Ideal for those cold winter days.
Ingredients 5 cups water 1 stick cinnamon 3 cloves 3 allspice berries 3 cardamoms - crushed 1 heaped teaspoon black tea - Assam or Ceylon leaves of 4 cups
Instructions Simmer the water and spices for 5 minutes, bring to boil and pour onto tea in a teapot. Steep for 5 minutes. Sweeten with honey, stir, strain and serve in colorful mugs.
A Summer Soother
Iced Green Tea with Wildflower Honey
This recipe makes 4 glasses.
Refreshing and invigorating.
Ingredients 1 heaped teaspoon Green (gunpowder) tea or 4 Green teabags 5 cups water 2 tablespoons of wildflower honey
Instructions Place tea in a teapot, bring water to the boil and pour onto the tea. Allow to steep for 5 minutes. Strain and allow to cool to room temperature before adding honey and puring over ice. Serve in tall glasses, garnished with a sprig of mint.
This recipe can also be made with black tea such as Ceylon Pekoe or Darjeeling.
