ELMSTOCK COOKIES
Ingredients
2 cups almond fluor or unbleached flour
1/2 cup raw sugar
1/2 cup confectioners' sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon water
1 cup unsalted butter sliced into 1/2 inch squares
Earl Grey or Chai or Camomlie tea leaves from 4 Elmstock teabags (remove tea from bag)
Directions
1. Preheat oven to 375F
2. Mix together flour, sugar, tea leaves and salt in a food prcessor or by hand.
3. Add vanilla, water and butter and mix until it turns into cookie dough.
4. Cut the dough in two halves and place separately on two sheets of parchment paper or plastic wrap.
5. Roll each into a foot long log.
6. Wrap and place in refrigerator for 40 mins.
7. Slice eack log into 1/3 inch thich pieces.
8. Place on baking tray lined with parchment paper or tin foil 2 inches apart.
9. Bake about 12 minutes unitl edges of cookies are golden brown.
10. Cool cookies on sheets for 5 minutes before serving.
